How to make homemade beef jerkey with oven.

####Ingredients

  • 1kg beef (I normally get 1 big piece like beef eye round, top round, etc. with clear grain so you can easily cut and tear the beef later)
  • 4-5 tablespoons of lemongrass (I used the minced lemongrass) or 3 lemongrass.
  • 3-4 pieces of garlic
  • 2 tablespoons of chilly powder (depends on how spicy you want)
  • 2 tablespoons of five spice powder
  • 1.5 tablespoons of raw sugar
  • 1.5 tablespoons salt
  • 1.5 tablespoons of oyster sauce
  • pepper

Preparation

  • beef: freeze the beef about 2-3 hours before slicing. Slice the beef into thin pieces (1-2cm each). Remember to cut the beef with grain (not against the grain).
  • slice and mix all the rest ingredients together in a big bowl
  • put on some glove and “massage” every beef slice in the mixture.
  • wrap up the bowl and put in the fridge for 6-8 hours (I normally leave it overnight)

Cooking

  • put all beef slices in a big pot with high flame and cook with no extra water. After 10-15 minutes, reduce the flame, stir all the pieces to make sure they are all cooked.
  • taste to see if they are cooked and have the right taste.
  • preheat the oven at 200F or 120C.
  • tear the beef slices into long small pieces (follow the grain)
  • put them all on the tray (with foil) and put it in the oven
  • open the oven every 10 minutes to stir the pieces (it normally takes around 30-40 minutes to dry them depends on how dry you want and how thick the pieces are)
